A POUND + OF BUTTER A DAY!

I continue to be amazed at how our milk cow can convert the grasses and legumes in our pasture into so may useful dairy products, including fresh butter.
Pictured is butter made today from yesterday’s milking. We do once a day milking, and are currently getting a little over 4 gallons of milk a day. I let the cream separate in the fridge overnight, and whip up a batch of fresh butter daily for baking or freeze it for later.
